| + | I found the tension between consumption and production fascinating. As we discussed in class on Tuesday, there is a fundamental disconnect today between food and its origins, particularly with meat but also with dairy and vegetables. It seems that that disconnect began even with dairy production; as cheese and butter were increasingly produced commercially, consumers had to be reminded of their connection to the finished dairy product--the connection between the milk they sold and the cheese and butter they bought had been lost to such an extent that consumers were buying oleomargarine and undermining their own income potential. - Nicole Steck | ||
